Creating a culture that supports food security and health equity at higher education institutions
Food insecurity on college campuses is a major public health problem and has been documented for the last decade. Sufficient food access is a crucial social determinant of health, thus campuses across the country have implemented various programmes, systems and policies to enhance access to food which have included food pantries, campus gardens, farmers’ markets, meal share or voucher programmes, mobile food applications, campus food gleaning, fo…
Barriers and facilitators to implementing and sustaining campus food insecurity initiatives
This study explored the barriers and facilitators to the successful implementation and sustainment of food insecurity initiatives on college campuses. Respondents (n = 65) included faculty, staff, administrators, and student leaders at higher education institutions in 28 states. Through an online survey, respondents reported experiencing multiple barriers (mean 3.7, SD 1.7) when implementing food insecurity initiatives. The three most commonly re…
A Decade of College Student Hunger
The first article on college food insecurity, published in 2009, sparked conversation on the dark secret many students face while seeking a college degree; they do not have secure access to food. Over 10 years later, numerous investigators around the globe have reported on the heightened prevalence of college food insecurity, the correlates that increase risk, and the detrimental outcomes associated with not having a secure source of food. In thi…
The Relationship between a Wellness Intervention and First-Year Retention
This study examines involvement in a wellness intervention, GetFRUVED, and its relationship between both first-year retention and cumulative grade point average (GPA) of first-time undergraduate students. A significant relationship between GetFRUVED participation and retention, specifically 12.4% higher retention for participants versus non-participants was present. No significant relationship was shown between participation and GPA. This study h…
Food Insecurity Risk among First-Generation College Students at an Appalachian University
Little is known about food insecurity rates among first-generation college students in Appalachia. This study examines food insecurity and associated risk factors among first- and continuing-generation college students attending an Appalachian university in the Fall of 2019. Students completed an online Qualtrics survey that measured food security status using the 2012 US Department of Agriculture ten-item Adult Food Security Survey Module. Multi…
College student sleep quality and mental and physical health are associated with food insecurity in a multi-campus study
Objective: To assess the relationship between food insecurity, sleep quality, and days with mental and physical health issues among college students. Design: An online survey was administered. Food insecurity was assessed using the ten-item Adult Food Security Survey Module. Sleep was measured using the nineteen-item Pittsburgh Sleep Quality Index (PSQI). Mental health and physical health were measured using three items from the Healthy Days Core…
EB4Cast Approach Improves Science Communication With Stakeholders in a College-Based Health Program
Communicating scientific results with community partners is often lacking in intervention programs, thus eB4CAST was developed to facilitate impact sharing. This article investigated using the eB4CAST dissemination tool to communicate impact from a campus-based obesity prevention program. Data from Get Fruved RCT university sites collected at baseline were used to generate eB4CAST reports. Experts (n=13) and RCT sites (n=15) were asked to provide…
Katalyst Pilot Study
This pilot study evaluated the impact of the Katalyst curriculum, a fifth-grade experiential learning program, on students' knowledge of a healthy lifestyle's impact on body functions. Katalyst's interactive curriculum spans two days and includes four, 60-min stations on body systems: cardiovascular/endocrine, gastrointestinal, neurological, and respiratory/musculoskeletal. Three schools were recruited, and two schools completed the intervention …
Development of iGrow
This manuscript describes the development of a “learn by actively participating” curriculum for youth and their adult caregivers (dyad pair) to increase gardening skills, culinary competence, and family meal time. The curriculum was developed by integrating “iCook 4-H” and Junior Masters Gardener “Health and Nutrition from the Garden”, and “Essential Elements of 4-H Youth Development” curriculums with additional resources for gardening activities…
Eb4cast
eB4CAST, evidence-Based forecast C-capture, A-assemble, S-sustain, T-timelessness (eB4CAST), framework was developed from existing dissemination and implementation (D & I) constructs as a dissemination tool to promote community-based program usability and future application in targeted populations. eB4CAST captures and transforms research findings into a dissemination report that shows program need and impact to endorse program continuation and e…
Teens Implementing a Childhood Obesity Prevention Program in the Community
High school student researchers and teen leaders from the Health Science Technology Academy (HSTA), under the supervision of HSTA teachers, led a childhood obesity prevention (COP) program (iCook 4-H). The objective was to evaluate the feasibility and perceptions of having teen leaders implement a COP program for dyads of youth (9−10 years old) and their primary adult food preparer. Behavior change and perceptions were assessed through surveys an…
Occupational Characteristics and Participation in Voluntary Associations
The study analyzes the nature of the relations between participation in, and joining, voluntary associations and seven independent variables measuring dimensions of occupational tasks, organizational structure, and attitudinal importance of contacts. The three dependent variables, i.e., participation, joining one or more associations, and joining three or more associations vary, to some degree, independently of one another and, therefore, are tre…
