Gatt and Global Order in the Postwar Era
In this interesting book, Francine McKenzie writes about an institution that was central to the making of a new international order after World War II: the General Agreement on Tariffs and Trade (GATT). Through a concise, well-structured series of topical chapters, we learn about the political history of GATT from its origins in 1948 to its eventual dissolution within the World Trade Organization in 1994. McKenzie relies on an approach that is ri…
Why did the industrial diet triumph? The massification of dairy consumption in Spain, 1965-90
The rise of a mass, agri-industrial diet after the Second World War was crucial for the culmination of the nutritional transition that western countries had been involved in since the second half of the nineteenth century-but why did the industrial diet triumph? This article takes the massification of dairy consumption in Spain 1965-90 as a study case. Using a newly constructed database and qualitative material within an evolutionary socio-econom…
From organized to disorganized capitalism? Market versus nonmarket coordination in Spain's dairy chain
Conventional wisdom has it that the food economy has transitioned from organized to disorganized capitalism. An era of extensive state intervention between around 1930 and 1980 would have been followed by an era of deregulation and increasing coordination through markets after around 1980. This article uses the case of Spain's dairy chain to propose an alternative view. In the case under study, there certainly were elements of state-coordinated c…

Sur plus de quinze années d’existence, Ager a publié des recherches réalisées par des géographes, des sociologues, des économistes, des historiens et des anthropologues. Nutritional transitions and the food system: Expensive milk, selective lactophiles and diet change in Spain, 1950-65
Why were products such as meat or milk relatively unimportant in the diet of European Mediterranean populations up until the 1960s? Conventional wisdom has it that this was a consequence of the environmental and macroeconomic conditions prevailing in the region, which basically involved aridity and economic backwardness. This article examines the case of dairy products in Spain in the 1950s and early 1960s; it then proposes a modified view in whi…

Places in Common: Exploring the Economic Geography of the Food Systems through the Case of Spain's Dairy Chain (1950s-Present)
How has the geography of the food system evolved as a result of the rise of a modern food processing industry? Have the geographies of farming and food processing conditioned each other strongly? Or, on the contrary, has there been a division of labour between farming regions and food processing regions? This article investigates this question through the case of Spain’s dairy chain between the 1950s and the present. The Atlantic regions in the n…
Food chains and the retailing revolution: Supermarkets, dairy processors and consumers in Spain (1960 to the present)
On the basis of an analysis of the retailing of dairy products in Spain from 1960 onwards, it is argued that the rise of supermarkets was conditioned by developments taking place in the food system, and not just by macro-scale socioeconomic change. Upstream, supermarket expansion depended on dairy processors’ capacity to push raw milk out of the consumer market. Downstream, the expansion was favoured by the transition towards a demand pattern tha…
Dairy Products and Shifts in Western Models of Food Consumption since 1950: A Spanish Perspective
Through a case study of dairy products in Spain, this article discusses the evolution of what economist Louis Malassis called ‘food consumption models’ in the West from the Second World War. Two distinct consumption models are identified: a first model based on the massification of milk consumption, and a second model featuring decreasing dairy consumption, an increasing role for second-degree processed products and the emergence of new consumer …
Reducing Depopulation in Rural Spain: The Impact of Immigration
The attraction of foreign‐born immigrants to rural areas in developed countries has aroused growing interest in recent years. The central issue in this study is the demographic impact of immigration in rural Spain, focusing on depopulated areas. The economic and demographic consequences of depopulation have become major concerns, and the arrival of international migrants has come to be seen as a possible solution. The aim of this study is to add …

The Demise of European Mountain Pastoralism: Spain 1500-2000
This article deals with the evolution of mountain pastoralism in Spain from 1500 to 2000. There were two major ruptures for the Spanish livestock sector during this period: the constitution of a market society in the early nineteenth century and the incorporation of industrial inputs for animal feeding from 1960 onwards. Only the second of these ruptures shifted comparative advantage from the mountains to the lowlands, but both of them created pr…
Exit, Voice, and Disappointment: Mountain Decline and Eu Compensatory Rural Policy in Spain
The article analyses the Spanish experience of EU compensatory rural policy in order to contribute to broader debates on the effectiveness of this kind of policy and the role of agriculture in the definition of European rural policies. In the case of Spain, compensatory allowances to mainly mountain farmers had little effect on economic trajectories or social cohesion because of the small sums involved, the exclusion of those with very small farm…
Rural Europe reshaped: The economic transformation of upland regions, 1850–2000 1
Agriculture is no longer the main sector in the economy of rural Europe. Based on a comparative analysis of nine upland areas from five different countries (Scotland, Switzerland, France, Italy, and Spain), this article argues that, contrary to the claims of most social science work on ‘rural restructuring’, the decline of agriculture in the rural economy should be understood from a long‐term perspective and in relation to European industrializat…

The Decline of Agrarian Societies in the European Countryside: A Case Study of Spain in the Twentieth Century
It is widely accepted that, in today’s developed countries, "rural" no longer equals "agricultural." However, few historical studies of modern occupational change in the countryside are available, especially for continental Europe. The transformation of rural Spain in the twentieth century is a case study in this broader history, reflecting upon the causes and implications of different paths of rural change. The decline of agriculture in the econ…
Extreme Depopulation in the Spanish Rural Mountain Areas: A Case Study of Aragon in the Nineteenth and Twentieth Centuries
The phenomenon of rural depopulation has been an intense and centuries-long process in the mountain areas of Aragon in Spain. Throughout the nineteenth century, the traditional economic model of these territories broke down due to the crisis suffered by seasonal sheep migration, the non-viability of the old forms of agricultural production based on self-sufficiency and the destruction of the scattered textile industry. The new scenario offered so…
