Predictors of Overweight and Obesity in Early Childhood Leaders in the United States
Examining intra- and inter-device reliability of pressure-mediated reflection spectroscopy in a multi-state sample of healthy adults
Objective: To examine the intra- and inter-device reliability of devices using pressure-mediated reflection spectroscopy (the Veggie Meter®). Design: A cross-sectional research study was conducted across eight sites in the USA. Using two Veggie Meters® at each site, participants completed five, counter-balanced pairs of finger scans. Intra-device comparisons included intra-class correlation coefficients (ICC) and calculation of the CV and 95 % CI…
Process Evaluation of Two Interventions to Improve Health Environments in Family Child Care Homes
Early care and education (ECE) environments influence children’s lifelong health behaviors, growth, and development. Although the number of interventions to improve health in ECE environments is increasing, few have been designed for and tested in family child care homes (FCCHs). This study reports the process evaluation of two interventions to improve FCCH health environments, both part of Happy Healthy Homes, a matched-attention randomized-cont…
Development and Implementation of a Hybrid Online and In-Person Food Sovereignty and Nutrition Education Curriculum for Native American Parents
The Food Resource Equity and Sustainability for Health (“FRESH”) study is an Indigenous-led intervention to increase vegetable and fruit intake among Native American children. As part of this study, we developed a hybrid (online and in-person) food sovereignty and nutrition education curriculum for the parents of these children. This 16-week curriculum was developed to promote household- and community-level healthy eating and food sovereignty pra…
Predictors of Overweight and Obesity in Early Care and Education Teachers during Covid-19
The purpose of this cross-sectional study was to determine individual, sociocultural, policy, and economic predictors of overweight/obesity in early care and education (ECE) teachers to identify modifiable opportunities to enhance the health of this critical workforce. ECE teachers (n = 1434) in the U.S. completed an online survey in late spring to mid-summer 2020. Teachers self-reported height and weight; body mass index (BMI) and weight status …
Design and Methods of a Participatory Healthy Eating Intervention for Indigenous Children
Objective: To increase vegetable and fruit intake, reduce body mass index (BMI), and improve parental blood pressure among American Indian families. Design: Randomized, wait-list controlled trial testing a multi-level (environmental, community, family, and individual) multi-component intervention with data collection at baseline and 6 months post-intervention. Setting: Tribally owned and operated Early Childhood Education (ECE) programs in the Os…
Cleaning Products Commonly Used in Oklahoma Family Child Care Homes
Little is known about the cleaning products used by early care and education programs that contribute to childhood asthma, particularly in Oklahoma where rates of uncontrolled asthma are higher than national rates (60.0% vs. 50.3%, respectively). We conducted a cross-sectional study of cleaning products used by Oklahoma-licensed family child care homes (FCCHs) ( n = 50) to characterize and identify potential respiratory-health risks associated wi…
Neighborhood and Family Characteristics Associated with Adiposity and Physical Activity Engagement among Preschoolers in a Small Rural Community
Findings suggest neighborhood safety, sidewalks, and use of public playgrounds are positively associated with MVPA among preschoolers, while backyard size and access to play equipment at home are not. These findings have implications for rural communities where space is plentiful but access to community space and sidewalks may be limited
Family child care home providers’ self-reported nutrition and physical activity practices, self-efficacy, barriers and knowledge
Objective: Describe nutrition and physical activity practices, nutrition self-efficacy and barriers and food programme knowledge within Family Child Care Homes (FCCH) and differences by staffing. Design: Baseline, cross-sectional analyses of the Happy Healthy Homes randomised trial (NCT03560050). Setting: FCCH in Oklahoma, USA. Participants: FCCH providers ( n 49, 100 % women, 30·6 % Non-Hispanic Black, 2·0 % Hispanic, 4·1 % American Indian/Alask…
Environmental Health-Related Policies and Practices of Oklahoma Licensed Early Care and Education Programs
Little is known about the environmental health-related policies and practices of early care and education (ECE) programs that contribute to childhood asthma, particularly in Oklahoma where child asthma rates (9.8%) and rates of uncontrolled asthma among children with asthma (60.0%) surpass national rates (8.1% and 50.3%, respectively). We conducted a cross-sectional survey with directors of Oklahoma-licensed ECE programs to assess policies and pr…
Associations between Community Built Environments with Early Care and Education Classroom Physical Activity Practices and Barriers
The influence of community-built environments on physical activity (PA) support in Early Childhood Education settings (ECEs) is unknown. The purpose of this cross-sectional study was to determine associations between community PA environments and ECE classroom PA practices. We included licensed Oklahoma ECE directors serving 3-to-5-year-old children. Parks and playground locations were exported from Google Earth. National Walkability Index was de…
Health Care Provider’s Role in Obesity Prevention and Healthy Development of Young American Indian Children
Introduction: Health care providers (HCPs) serving American Indian (AI) populations are critical stakeholders in promoting healthy weight-related behaviors of young AI children. The purpose of this study is to develop an understanding of how HCP perceive their role in the healthy development of young AI children, and how they envision working with early care and education teachers and parents to enhance children’s health. Method: Twenty HCP that …
Early Care and Education Teacher’s Role in Obesity Prevention and Healthy Development of Young American Indian Children
Introduction: The purpose of this study was to develop an understanding of how stakeholders, specifically early care and education (ECE) teachers, perceive their role in the development of young American Indian children, and envision working with health care providers and parents in order to enhance children’s health. Methodology: Twenty tribally affiliated ECE teachers from Oklahoma participated in interviews. Thematic analysis was conducted, an…
Association Between Maternal Stress, Work Status, Concern About Child Weight, and Restrictive Feeding Practices in Preschool Children
Mothers’ self-reported grocery shopping behaviours with their 2- to 7-year-old children
Objective To assess relationships between mothers’ feeding practices (food as a reward, food for emotion regulation, modelling of healthy eating) and mothers’ willingness to purchase child-marketed foods and fruits/vegetables (F&V) requested by their children during grocery co-shopping. Design Cross-sectional. Mothers completed an online survey that included questions about feeding practices and willingness (i.e. intentions) to purchase child-req…
Obesogenic Behaviors, Self-Efficacy, and Depressive Symptoms in American Indian Children
BACKGROUND: American Indian (AI) children suffer from high rates of obesity, obesity-related disease, obesogenic behaviors, and depressive symptoms. OBJECTIVE: Study was designed to determine the associations between depressive symptoms and obesogenic behaviors in school-aged AI children in Oklahoma. METHODS: Study design was cross-sectional. Depressive symptoms, beverage intake, fruit and vegetable intake, meal frequency, physical activity, and …
Macronutrient and micronutrient intakes of children in Oklahoma child-care centres, USA
