From Ethnic to High-End Cuisine: Recategorization and Status Change Among Restaurants in Global Cities
This article examines the strategies used by individuals within cultural fields to make a transition from previously low-status categories to high-status categories, in order to rise in the status hierarchy. Using the case of gastronomy in the global cities of London and New York, we investigate how the once strict boundary between high-end and ethnic restaurants is being breached, leading to field transformations. An analysis of the process of r…
Constructing Global Tastes: A Comparison of Two Cultural Intermediaries in the Field of High-End Cuisine
The paper elucidates the influence of cultural intermediaries (CIs) at the global level by studying their role in one cultural field, culinary culture. We examine the World’s 50 Best Restaurants list and the Michelin Guide, the two most referred to global evaluative systems in fine-dining. By making a systematic comparison of these CIs’ judgment devices and dispositions, our study elaborates on three key aspects of cultural intermediation: first,…
Collaboration and competition in cultural fields: Non-core high-end cuisines in global cities
This paper examines global flows of culinary cultural knowledge, expertise and practitioners from previously culturally peripheral countries/cultures to two global cities in core countries – London and New York. Our paper finds that, contrary to Bourdieu’s claims, “struggle in the field” is not an invariable attribute of cultural fields. Instead, the high-end culinary field shows substantial evidence of collaboration between chefs. We explain thi…

This article examines how Luhmann's theory of organized systems can be used to expand our understanding of organizational boundaries. In a systematic way, we examine four central components of Luhmann's work: i) its basic distinction between organization and environment, ii) the openness and closeness of the organizations’ functioning, iii) the role of communications and decisions in identifying the limits of organizations and, lastly, iv) Luhman…
Order at the Edge of Chaos: Meanings from Netdom Switchings across Functional Systems
The great German theorist Niklas Luhmann argued long ago that meaning is the central construct of sociology. We agree, but our scheme of stochastic processes-evolved over many years as identity and control-argues for switchings of intercalated bits of social network and interpretive domain (i.e., netdom switchings) as the core of meaning processes. We thus challenge Luhmann's central claim that modern society's subsystems are based on communicati…
