Economic aspects of food, protein and energy consumption in a region of Southern Tunisia
As part of a study on the effects of lysine fortification of wheat in Southern Tunisia, the food consumption of the villages in the study area was determined. After a qualitative survey (by questionnaire), four quantitative surveys were made on random samples of about 200–300 families stratified by source and amount of income. Wheat products supplied 85 percent of the dietary piotein. Dietary energy was also supplied mainly by wheat products (66 …
