    The article presents the results of studies of the influence of organic and mineral fertilizers, as well as storage and processing technologies on the level of nitrates in potatoes, carrots and cabbage. The study demonstrated that in order to obtain the high yield of environmentally friendly vegetable crops, it is necessary to use biohumus at a norm of 8 t/ha or the combination of 6 t/ha biohumus and N35P35K40.
