The nutritional value of some foods consumed on San Tomé Island
Samples of nine plant foods prepared and cooked according to local methods were analysed by approved methods. The analyses included amino acid composition, mineral, and vitamin determinations. The quality of the protein was also evaluated by indices based on the amino acid composition.
