  • Weight and Mental Health Status in Massachusetts, National Survey of Children’s Health, 2007

Open Access•Emily Lu, Rashmi Dayalu et al.•ARTICLE•Maternal and Child Health Journal•2012

  • Effect of ‘Kanwa’ treatment of cowpea (vigna unguiculata) seed flour on protein quality as measured by growth rate assays in rats

    Stella G Uzogara, I D Morton et al.•ARTICLE•Ecology of Food and Nutrition•1991

The growth performance of weanling Sprague‐Dawley rats fed test diets based on cowpea seed flour prepared using ‘Kanwa’ (an alkaline rocksalt) was studied. In addition, the protein quality (NPR & PER), feed efficiency and organ weights were determined at the end of the 21‐day growth assay. A 10% casein protein diet and a protein free diet were fed as positive and negative controls respectively. Growth, feed utilization, protein efficiency ratio (…

  • A review of traditional fermented foods, condiments and beverages in Nigeria

    Stella G Uzogara, L N Agu et al.•ARTICLE•Ecology of Food and Nutrition•1990

This report presents a survey of traditional fermented foods, condiments and beverages consumed by various ethnic groups in rural Nigeria. Common fermented foods from local staples in Nigeria include cassava products (garri, fufu, elubo, abacha, akara akpu), yam products (amala), mai…

  • Tyramine content of some Nigerian foods

    Stella G Uzogara, N F Ezekoli et al.•ARTICLE•Ecology of Food and Nutrition•1987

The tyramine content of some Nigerian fermented foods was quantitatively estimated spectrophotometrically. The objective was to find those Nigerian foods high in tyramine so as to exclude or restrict them from the diets of patients receiving monoamine oxidase inhibiting (MAOI) drugs, and from patients suffering from high blood pressure or other conditions. The highest amounts of tyramine were observed in fermented melon seed paste, Ogiriegusi (11…
