People's community kitchens in Peru
The women's community kitchen movement in low‐income areas of Lima and Callao has, over the last twenty‐five years, played an important role in contributing to household food security and improved nutrition. Risk analysis of poor health and growth failure of children in the central highlands of Guatemala
Body composition estimates using different measurement techniques in a sample of highland subsistence farmers in Guatemala
This study aims at assessing the accuracy of estimates of body composition provided by bioimpedance (BIA) equations developed for U.S. populations when applied to a sample of Guatemalan farmers. If these equations were shown to have low validity, the second objective was to develop more accurate estimates of fat‐free mass (FFM). One hundred males and females 19 to 45 years of age were randomly selected from four rural communities in the Western H…
Household food security, nutrition and crop diversification among smallholder farmers in the highlands of Guatemala
The study examined economic, food security and nutrition outcomes associated with crop diversification among small farm households in the Western Highlands of Guatemala. The analysis pulled together data from a farm production and household expenditure survey, and a food intake and anthropometry survey, conducted in the same group of highland farmers but with an interval of eight months. The sample of farmers and their households were classified …
Nutritional consequences of U.S. migration patterns among Puerto Rican women
The study investigated the associations between the U.S. migration status of adult women horn in Puerto Rico and the adequacy of their energy and micro‐nutrient intake, macro‐nutrient composition of their diets and the prevalence of obesity. Three migrant groups were compared: non‐U.S. migrants, return migrants, and forward migrants. The groups differed in socioeconomic characteristics. Forward migrants had a more adequate energy and micro‐nutrie…
Energy intake and productivity of Guatemalan sugarcane cutters
Home gardens and the energy and nutrient intakes of women and preschoolers in rural Puerto Rico
The study investigated how the increased availability of self‐grown foods was related to the adequacy of the energy and nutrient intake of rural women and preschoolers in Puerto Rico. The 109 women included in the study were found to be most seriously deficient in iron and calcium, and tended to suffer from obesity. The 50 preschoolers demonstrated no serious chronic/acute undernutrition or growth retardation, and were most seriously deficient in…
