The Bakery in the Maison à la Citerne at Volubilis
During the 2019 field season, a small team working in Volubilis (Morocco) re-exposed a bakery in the Maison à la Citerne, originally excavated in the 1950s, and used archival and documentary evidence to isolate unexcavated floors and other stratigraphy. The recent discovery of a bakery in the Casa Rustio Vero at Pompeii has revived a discussion about forced labor and punitive incarceration in Roman-era bakeries. The bakery was hidden in the back of the house and had bars on windows between the house and the bakery, restricting access into or out of the bakery. The primary goal of this fieldwork was to provide the first detailed study of the interior operations of the city’s commercial bakeries, documenting the various technologies and attributes within the workshops.
