This study investigates the adaptation of the theory of motivation in food tourism, with a specific focus on the moderation of eco-food destination image. Drawing on a case study of 637 Vietnamese domestic tourists. The findings reveal that seven of the ten hypotheses tested were supported. Specifically, socialization motivation, cultural experience motivation, taste of food motivation, local destination appeals motivation, and core food-tourism appeals motivation were found to have positive and significant direct effects on travel intention. Furthermore, the study demonstrates that eco-food destination image is a significant moderator in the relationships between local destination appeals motivation and travel intention, as well as between core food-tourism appeals motivation and travel intention. However, eco-food destination image was not found to moderate the relationships between socialization motivation, cultural experience motivation, taste of food motivation, and travel intention. These findings contribute to understanding the motivation theory in food tourism and highlight the importance of eco-food destination image as a moderating factor
