Research Article| August 01 2020 Community Health Research, Restaurants, and Adjusting amid Uncertainty Melissa Fuster Melissa Fuster Melissa Fuster is Assistant Professor at the City University of New York Brooklyn College and a member of the Gastronomica collective, researching and teaching at the intersection of policy, social sciences, and community nutrition. Her book under contract (with University of North Carolina Press) examines how culture and structure influence cuisine and health in Hispanic Caribbean communities. Her current research addresses restaurants and health promotion.
