在人类文明的长河中,对动物资源的利用与加工,尤其是通过烹煮技术将生食转化为熟食,不仅是生存技能的一次飞跃,也是社会进步与文化发展的重要标志。这一转变不仅提升了食物的安全性与可消化性,还促进了人类体质的增强与智力的发展。随着考古学研究的深入,旧石器时代人类煮食行为的探索成为揭示古代人类生活方式、技术水平乃至社会结构的关键窗口。然而,由于动物骨骼遗存本身在经历煮制后发生的物理化学变化相当有限,且很容易被各种自然或人为因素所覆盖,导致人们难以对考古遗址出土的煮过的骨头进行甄别。为了解决这一难题,国际上有不少学者进行各种研究并取得一定进展。本文在简述人类煮制历史起源的基础上引出了煮制骨研究的意义与挑战,并从宏观观察、微观分析以及热力学反应研究等层面对煮制骨遗存判定方法研究成果进行介绍,归纳总结出一些煮骨鉴定的方法与思考
