In response to changes in agricultural technique, conditions of employment, example and advertising, the food habits of many communities are changing. This demolishes the idea that food habits are immutable. Many changes are probably for the worse, but a few are beneficial and some of these were deliberately planned by organisations concerned with human welfare. The sources from which increased supplies of food (especially protein‐rich food) could come, and the forms that the resulting food might have, are considered briefly. The methods that should be used to give novel foods the prestige they will need if they are to be used extensively to promote beneficial nutritional change are discussed in more detail. Of these, the most important is the manifest improvement in the appearance of children given novel foods in clinics; this is the nutritional equivalent of on‐the‐farm demonstrations of improved techniques in agriculture, and these have proved very successful
