When historians of Roman Gaul treat rural economy they stress the development of stock-breeding between Caesar's conquest and the 2nd century AD. Yet examination of their work shows that they have hardly ever pursued their investigations further, and they have payed little attention to gathering evidence for the late period. The goal here is not so much a description of stock-breeding in Gaul in the 4th - 5th centuries as an attempt to fill in a gap with information on livestock from texts. Some thoughts on the possible use of this documentation supplement a critical inventory which deliberately excludes references of a literary or religious nature
