The article recalls the achievements of the book La cuisine du sacrifice en pays grec (1979), and reviews some of the theses defended in this work. It re-examines particularly the assertion that the “concealment of violence” is a central element of Greek blood sacrifice. Reconsidering the ancient evidence as well as the archeological and iconographic material, including not only vases but also a number of votive reliefs, this study discusses especially the statement that the sacrificial knife (machaira) was intentionally kept out of sight, “buried” in the sacrificial basket (kanoun), under the barley corns and the fillets. It discusses also the idea - which is almost a cliché in Greek studies - that the victims should go without being restrained by ropes or other kind of desmoi. Finally, in the light of Porphyrius (de Abstinentia, about the Bouphonia and the Dipolieia), this article reconsiders the theory of “bad conscience” and “guilt” in killing sacrificial animals, among ancient Greeks
