The frozen vegetable industry in Mexico is a new exporting activity that has developed dynamically during the last decade, becoming the second source of foreign currency within the food industry. In this article, the historical conditions and main characteristics of this industrial sector are analyzed, such as its industrial process, supply mechanisms, marketing, etc., whose dynamism has been a result of the increasing demand from the supermarkets and restaurants in the United States for “convenience food”. The Mexican industry of frozen vegetables is closely linked to the United States trough commercial channels (raw materials and end products), capital movements and technology transfer. These aspects are described in this case study, as well as the restructuring process that has come about in the global commodity chain, as a result of a new division of labor based on the comparative advantage of Mexico due mainly to lower labor costs.
