The objective of this article is to analyze the consumption of potatoes in the context of the agri-food system in Costa Rica, over the period 1943-2015. It is concluded that the consolidation of the potato in the diet of the country was late, after the second half of the decade of 1980. However, the dynamics of consumption changed during the process of economic liberalization, especially by the importation of processed potatoes.
