(1 livre) bœuf 2-3 douzaines de gonbo ou kalalou moyens 2-3 tasses d'eau 1 tasse de djondjon (champignons noirs) 3-4 sirik (crabes de mer) Huile Épices Mettre le bœuf salé au feu dans une casserole remplie d'eau pour le ramollir et enlever son excès de sel. L'enlever de l'eau, le laisser refroidir puis le couper en morceaux ; goûter-le. S'il est a perdu beaucoup de son sel, l'assaisonner avec les épices. Dans une chaudière, le faire prendre couleur. Ajouter les gonbo ou kalalou. Les laisser prendre un peu de couleur avec la viande. Couvrir, laisser cuire à feu doux jusqu'à ce que la viande soit tendre. Dans une autre casserole, mettre de l'eau à bouillir. Y ajouter les djondjon triés, c'est-à-dire, débarassés de leurs pédoncules ou queues (à la manière capoise). Les laisser dans l'eau bouillante jusqu'à ce que l'eau devienne très noire. Verser assez d'eau du djondjon dans la chaudière contenant les gonbo ou kalalou et la viande. Prélever une petite quantité du liquide de cuisson du bœuf salé et l'additionner au mélange. Laisser mijoter pour épaissir la sauce. A la fin, ajouter les sirik (crabes) nettoyés et assaisonnés. A noter: le kalalou-kongo se mange soit avec du riz blanc soit avec du tonmtonm (purée de fruit de l'arbre à pain). [End Page 326] Recipe for Callaloo-GONBO (recipe from Cap-Haïtien) 200 gr. (1 lb.) beef 2-3 dozen medium-sized okra pods 2-3 cups water 1 cup djondjon (black mushrooms) 3-4 sirik (salt-water crabs) Oil Spices Place brisket in a saucepan filled with water in order to soften it and to remove salt. Take it from the water, let it cool then cut it into cubes; taste it. If it has lost much of its salt season it with the spices. Place in a cooking pot to bring out the color. Add the okra. Let it take on a bit of color along with the meat. Cover and let it cook over low heat until the meat is tender. Boil water in another saucepan. Add the okra from which the stems and tips have been removed (Cap-Haïtien style). Let them boil until the water becomes quite black. Pour enough of the mushroom water into the cooking pot with the meat and okra. Take a small quantity of the liquid from the brisket saucepan and add it to the mixture. Let the mixture simmer until the sauce thickens. At the end, add the cleaned and seasoned sirik (crabs). Note that kalalou-gonbo is eaten with white rice or with tonmtonm (mashed breadfruit).
