During the 18th century the manufacture of starch was among the most economically significant of the European organic chemical industries.' Yet historians have given little attention to the technological development of this industry prior to 1850.2 This article offers one reconstruction of that history. It discusses the basic methods of manufacture used by British and French starch manufacturers during the 18th century and the first half of the 19th and some of the economic and political changes that may have influenced the evolution of those techniques. In so doing, it provides new information on the comparative state of manufacturing technology in Britain and France at the time of the Industrial Revolution
