Ayurveda is the traditional system of medicine indigenous to India, and the epistemic references that interlink various traditions of India, the culinary practices, and the dietary patterns provide an insight into the intuitive and unique approach presented by Ayurveda, the science of life. This chapter explores the various principles of Ayurvedic dietetics, provides an overview of the traditional roots of Indian cuisine, the causality between health and diet, and implications of food habits on health as described in the various Ayurvedic classical texts. Further, the current scenario regarding dietary intake and disease burden is presented, and the contributions that Ayurveda as a system of medicine can make are iterated.
