Every two or three years, since 1970, the International Ethnological Food Research Congress has brought together scholars from many different countries in order to explore a theme of common interest. Members will probably know the volume Food in Perspective edited by our past presidents Sandy Fenton and Trefor Owen, which records the proceedings of the third conference, held at St Fagans in 1977. This year, 1992, the Congress was held in Ireland, being organized on behalf of the Department of Irish Folklore, University College Dublin, by Dr Patricia Lysaght. It was appropriate that the chosen theme was milk and milk products, since these have played a vital role in the Irish economy, and in Irish foodways, since ancient times. As primary foodstuffs they also featured prominently in the beliefs, customs, rituals and narratives of the Irish people
