Efficiency of calcium carbonate oven stones

This paper is an attempt to better understand the use of earth ovens on atolls. A study was make linking ethnographic records of calcareous oven stones with an experiment which replicated the chemical conditions within an earth oven. It appears that calcium carbonate (CaCO3) dissociates to quicklime (CaO) during heating and hydrates to slaked lime (Ca(OH)2) during cooking. This reaction, shown to have occurred in archaeological sites, can liberate more heat in the oven than volcanic stones. This suggests that calcareous material makes better oven stones than previously thought
