IF THE NAME of the Aragonese town of Calatayud evokes any reaction from the average Spaniard, it is probably not because of its ancient history, its Roman or Arabic ruins, its part in the War of Independence or the Carlist Wars, nor because it is on the main highway between Madrid and Barcelona, some fifty miles from Zaragoza. The average Spaniard, as well as many foreigners, will know of Calatayud because of the reputation of a girl named Dolores
