Work organizations construct gender relations by two mechanisms. First, they allocate men and women to different positions. Instead of the traditional pattern of firm-specific segregation of waiters and waitresses, quantitative data show that most restaurants in this study have integrated wait staffs. Using a gendered organization perspective, this research examines how restaurants structure gendered service encounters and how table servers perform gendered scripts of good service. Interview data from integrated wait staffs in five kinds of restaurants reveal three scripts of good service-friendliness, deference, and flirting. Gender inclusiveness is studied by a content analysis of index citations on women and women's issues in 36 introductory sociology textbooks published between 1982 and 1988. The number of citations and the number of unique devoted to women were coded for location in one of 26 sociological areas.
