Every step you take: Nudging animal welfare product purchases in a virtual supermarket
Animal welfare (AW) is a growing concern for consumers in Germany; however, not all consumers regularly purchase products that have been produced according to high AW standards. The goal of the present study is to test the effect of a multilayered nudge to increase the availability and improve the visibility of AW products in a 3D online virtual supermarket (VS). The nudge included a shelf with AW products (referred to as AW shelf) which was made…
Factors affecting tourists' public transport use and areas visited at destinations
Tourist movement patterns and transport mode choice are important topics in tourism research. However, little is known about how tourists at an urban destination make their decision on the areas that they visit and transport modes used. This paper examines tourists' choice of transport mode and areas visited in the Munich region through the use of a bivariate probit model. The findings show that tourists' choice of transport mode and areas visite…

This handbook brings together contributions from the top researchers in the economics of food consumption and policy. Designed as a comprehensive guide to academics and graduate students, it discusses theory and methods, policy, and current topics and applications
The public understanding of nanotechnology in the food domain: The hidden role of views on science, technology, and nature
In spite of great expectations about the potential of nanotechnology, this study shows that people are rather ambiguous and pessimistic about nanotechnology applications in the food domain. Our findings are drawn from a survey of public perceptions about nanotechnology food and nanotechnology food packaging ( N = 752). Multinomial logistic regression analyses further reveal that knowledge about food risks and nanotechnology significantly influenc…
Food Consumption and Health
This article reviews the economic literature on the causes and consequences of current trends in food-related chronic diseases (FRCD) from a policy evaluation viewpoint. It focuses on policy interventions on the consumer side in developed countries. It recalls some key facts regarding historical trends in nutrition and FRCD, and highlights individual heterogeneity that is hidden behind aggregate trends. Some estimates of the medical and human cap…
‘Do not eat fish more than twice a week’. Rational choice regulation and risk communication: Uncertainty transfer from risk assessment to public
Regulators try to change consumers’ behaviour by issuing advice. This regulatory approach is built on a particular, normative theory of social action that assumes that individuals are unable to make rational decisions when they have imperfect knowledge about risk, and that this deficiency can be overcome by advice that offers them proper information. This paper examines the question, can a regulatory tool based on rational choice theory be effici…
Knowledge, attitudes towards and acceptability of genetic modification in Germany
Testing for the Monotone Likelihood Ratio Assumption
Although monotonicity of the likelihood ratio for conditioned densities is a common technical assumption in economic models, empirical tests for its plausibility do not appear to have been conducted. This article develops such a test based on the theory of order-restricted inference that is robust with respect to the correlation structure of the distributions being compared. The test is applied to study the technology revealed by agricultural pro…
Demand for Beef from Cattle Administered Growth Hormones or Fed Genetically Modified Corn: A Comparison of Consumers in France, Germany, the United Kingdom, and the United States
We compare consumer valuations of beef ribeye steaks from cattle produced without growth hormones or genetically modified corn in France, Germany, the United Kingdom, and the United States. Results suggest that French consumers place a higher value on beef from cattle that have not been administered added growth hormones than U.S. consumers; however, valuations of non‐hormone‐treated beef are statistically indistinguishable across Germany, the Un…
