Use of fat-modified food products to change dietary fat intake of young people
Food purchasing and preparation practices were modified in two boarding high schools to increase the polyunsaturated-to-saturated fat ratio (P/S) of the diet of students by changing food products rather than attempting to change eating behaviors. During years when fat-modified products were served, the P/S of males increased by 75 percent, versus a decrease of 6 percent during control years. For females, P/S increased by 53 percent during interve…
Biochemical and logistic considerations of amino acid fortification in Southern Tunisia
Cereal products are the major sources of dietary energy and protein in many developing countries where nutritional deficiencies are either present or suspected. Such countries may consider the potential for fortifying these cereal products with nutrients in which the total diet is limited. A large field study in Southern Tunisia recently attempted to assess the effect of fortification of wheat products with a variety of vitamins, iron, and the am…
Economic aspects of food, protein and energy consumption in a region of Southern Tunisia
As part of a study on the effects of lysine fortification of wheat in Southern Tunisia, the food consumption of the villages in the study area was determined. After a qualitative survey (by questionnaire), four quantitative surveys were made on random samples of about 200–300 families stratified by source and amount of income. Wheat products supplied 85 percent of the dietary piotein. Dietary energy was also supplied mainly by wheat products (66 …

Coronary Heart Disease and Behavior Patterns
The methods of research used in relating a behavior pattern to coronary heart disease, elevated serum cholesterol levels, decreased clotting time, and increased norepinephine secretion was examined, and an independent study using the earlier procedures was done. One hundred and eighty-nine men, 35–55 years old, were examined in three hospitals. Three groups were selected: (1) patients with clinical coronary heart disease, (2) those with peptic ul…
