This collection of articles brings together a set of four complementary contributions that investigate the advent and development of the mass consumption of food in Belgium in the nineteenth and twentieth centuries, with a particular spatial emphasis on the urban centres of Antwerp, Brussels and Leuven. In doing so it bridges important knowledge gaps and creates a better understanding of how urban foodways have evolved over the past two hundred years and the ways in which cities have attempted to feed their rapidly growing and diverse populations. In this introduction, we outline a brief contextual and conceptual state-of-the-art before delving into the new contributions assembled here. We address historiographic lacunae, as well as new insights and potential future avenues of research arising from these case studies. Résumé Ce dossier thématique rassemble une collection de quatre articles complémentaires qui expliquent comment l’essor de la consommation alimentaire de masse s’est développé en Belgique au cours des XIXe et XXe siècles. Tous ces articles se concentrent sur les aspects liés au développement de la consommation alimentaire de masse, en mettant l’accent sur les centres urbains d’Anvers, de Bruxelles et de Louvain. Ce faisant, ils contribuent à mieux connaître et mieux comprendre la manière dont les habitudes alimentaires urbaines ont évolué au cours des deux cents dernières années et comment les villes ont tenté de nourrir leurs populations diversifiées et en croissance rapide. Dans l’introduction, nous dressons un bref état des lieux contextuel et conceptuel, avant d’approfondir les nouvelles contributions rassemblées ici. Nous abordons les lacunes historiographiques, les nouvelles perspectives et les pistes de recherche ouvertes par ces articles
