Sacrifices of animals played an important role in Greek politics and religion, and ancient written sources mention a wide variety of sacrifices, each appropriate to specific situations. There has, however, been little investigation of the extent to which different sacrificial procedures are reflected in the physical remains of sacrifices—the bones of the animals and their contexts—and the extent to which this information may be interpreted. During the excavation of a deposit of sacrificed animals in front of the entrance to the tomb chamber of the Maussolleion at Halikarnassos, systematic evaluation was made of the evidence pertaining to slaughtering and butchering. All cutting and chopping marks on the bones were recorded, so it was possible to show, in great detail, how butchering followed a fixed procedure in which some stages in the process were the same for all animals, while others varied according to the species, age or size of the animal
