In order to ascertain the effects of current changes in dietary pattern and social structure in Polynesia on obesity and blood lipids (cholesterol, high density lipoprotein‐cholesterol, low and very low density lipoprotein‐cholesterol, triglycerides), surveys have been carried out in a Polynesian island population divided among various villages with significant contrasts in ecology, economical status, dietary habits and occupational work. Two villages were distinguished by an elevated saturated fat intake provided by hunting meat, a high level of physical activity and consequent normal body weight, skinfold thickness, total blood cholesterol and HDLc levels. In contrast, the population of another village had a lower level of physical activity, a large part of its food was provided by imported supplies and it had a low fat intake. This village had more obesity and an abnormally low HDLc. The role of dietary patterns in the emergence of the contrasts in obesity and serum lipid concentration in populations of different villages according to their lifestyle and socio‐economic status is discussed
